Maragogype, a top tier coffee, that normally doesn't grow in high altitudes. She is a finicky plant. She requires lots of attention, produces lower yields unlike other varietals, and susceptible to disease. Not many farmers take on the challenge, however Don Roberto grows this specifically because it's his wife's favorite coffee.

For this micro-batch, we have chosen a 'honey' process. This method involves picking and sorting the coffee cherries, removing their skins and pulps, but leaving the sticky-sweet outer layer of the fruit on during drying. This retains more natural sugars on the beans and uses less water showcasing the ecological farm's commitment to sustainable practices. With extremely limited quantities available, get it before it's gone.
